My sister just made me these wonderful candy-bar-cookies for me. I'm not sure what I'd call them for sure, but I know when I ate them during my last 20 miler, they went down easy and stayed down. Best of all, I had sustained energy. Who knows if they're the "correct" balance of protein, carb and whatever else I'm supposed to eat while running miles and miles, they seemed to work for me.
I'm sure they're edible when not running many miles :)
“Healthy Candy” by Mary friend of my sister Kathy
2 ½ c. sunflower seeds
1 c. slivered almonds
½ c. sesame seeds
1 ½ c. honey (I have used agave syrup and/or honey)
1 ½ T. water
¼ c. peanut butter
1 ½ t. vanilla
1 t. lemon juice
3 c. soymilk powder (I used reg. milk powder)
Roast sunflower seeds & almonds together (10-12 min.) Add sesame seeds and roast approx. 2 min.
Boil honey and water until hard ball stage on candy thermometer – 250ยบ, remove from heat. Use your instincts – if you cook it too long the candy will be very hard to chew!
Add peanut butter, vanilla, lemon juice and milk powder. Add seeds last. It is hard to stir!!!
Oil 13x9” pan and spread . Cut while still warm. I use parchment paper and cut with a pizza cutter.
